Thai Green Curry Paste: You Need to know First!

Thai green curry paste is recommended foundation of many dishes in Thailand. This paste is famous for it’s bold vibrant color and flavorful profile which instantly awakens your taste buds. I am not asking that this paste is limited only to curries rather than it can also be used in soups and many vegetarian meals. That is why this paste is highly customizable and can be served as an important kitchen ingredient. Many people rely on store-bought versions of this paste for their easiness but I would recommend you to prepare in your own kitchen. Instead of mortar and pestle, using blender is not always suggested if you want a genuine taste and experience. It’s only a tip which you can use in short-time scenarios.

Thai Green Curry

Gather the Ingredients:

Your 1st priority of preparing Thai green curry paste is gathering the ingredients. The ingredients you will use are:

• 2 stalks lemongrass finely chopped (outer layers removed).

• 1 tablespoon of brown sugar.

• 1 tablespoon of fish sauce or soy sauce.

• 1 thumb-sized piece of galangal or ginger (peeled and chopped).

• Juice and zest of 1 lime.

• 1/4 cup of Thai basil (fresh)

• 4-6 Thai green chilies (you can adjust them to your taste).

• 3 shallots (must be chopped and peeled).

• 4 cloves garlic (peeled).

• 1/4 cup of fresh cilantro leaves and stems.

• 1/2 teaspoon of white pepper.

• 1 teaspoon ground cumin.

• 1 teaspoon ground coriander.

• 1 teaspoon shrimp paste (but you can skip it if you want a vegetarian vibe).

Step-by-Step Guide to Make Thai Green Curry Paste Conveniently.

• Step 1: Toast the seeds.

Start with the whole coriander and cumin seeds and place them in a dry skillet and medium heat. Toast them for 2-3 minutes until they turn gold and fragrant.

Step 2: Gather the ingredients.

In a blender (or mortar and pestle), add all your fresh herbs and spices like lemongrass, ginger or galangal, green chilies, shallots, garlic and shrimp paste (if using to give a kick of umami flavor). Don’t forget fresh cilantro stems, brown sugar, sweet basil and  lime zest + juice (kaffir lime zest is preferred) and fish sauce (soy sauce also can be used but fish sauce is preferred) for tasty brightness.

• Step 3: Add the toasted spices.

Add your toasted spices (coriander and cumin seeds) that you have prepared earlier.

• Step 4: Blend them all:

Now you have to pour in a little splash of water to help in blending. Blend everything thoroughly until it became a thick and smooth paste. It is my suggestion (if you are using blender) to often stop between blending and scrap down the sides of the blender so that it all mixes evenly avoiding them to stick with the sides of the blender. After blending do a quick test for your taste. If it needs more salt, you can adjust it with fish sauce, if it needs to be more spicy, adjust it with chilies and if it needs to be more acidic or sour, you can add a splash of lemon for a tangy taste.

To store your paste, first transfer it to a clean jar. In fridge, you can keep it easily for about a week. It is highly recommended to store it in ice cube trays.
